Honeybun Cutter & Proofer Loader

The Graybill Honeybun Cutter & Proofer Loader significantly improved operations for a customer who was experiencing substantial production losses and excessive product waste. Prior to implementation, the customer faced persistent issues during the proofer tray loading process, including honeybuns being folded over, stacked improperly—often one on top of another—or misaligned and hanging off the edges of the trays. These placement errors not only resulted in damaged product but also disrupted the proofing process and downstream production flow. To compensate, the customer had resorted to assigning multiple operators to manually monitor and assist the loading machine, increasing labor costs and reducing overall efficiency. By automating and precisely controlling the cutting and loading functions, the Graybill system eliminated these inefficiencies, resulting in more consistent product handling, reduced waste, and streamlined labor usage.

Graybill designed and built a replacement guillotine and proofer loader that placed the dough pieces on the proofer trays in a repeatable pattern, without damage, and with control over the spacing. After eliminating the product lost due to damage and the people assisting loading, Graybill was able to increase the operating speed for a triple gain in productivity.
