Sugar Wafer Book Cutter

A customer developed a low-fat sugar wafer product that used cream so soft and sticky that conventional cutting techniques did not work. Books buckled and cracked, cut pieces stuck together and book cutter jams were frequent.

Graybill designed and built a new sugar wafer book cutter with a revised book cutting process, so that there was less cutting pressure, more precise guiding and separation of cut edges, and powered separation of cut ends. Powered spreading tables integrated with the sugar wafer book cutter spread the cut fingers onto wide, high-speed enrobing lines.
